More than 1.000 olive trees of different species and ages are planted in various parts of Borgo Pignano, each of which has its own terrain and soil. The various combination of species and earth lend a distinctive flavor to our olives. Our olive orchards contain Olea Europea, Frantoio, Leccio del Corno and Leccino e Pendolino and combine to give our oil a round and fragrant character with a spicy aftertaste. All our olives are harvested by hand, usually in early November, and are subsequently cold pressed. The oil is stored in dark containers at a constant temperature and sheltered from daylight. The result is an olive oil, rich in Vitamin F and which sometimes almost seems to speak in the Tuscan dialect.
