The “orto”, Borgo Pignano’s organic vegetable garden, is planted with dozens of rows of tomatoes, garlic and basil. Once harvested its these same tomatoes, garlic and oil that provide the essence for our "Etruscan Sauce" which is derived from recipes cherished for generations in Tuscany. The sauce is a natural companion for our artisanal organic pasta, and also lives happily atop crostone or pizza. At serving, we find it tastes even better with an extra drizzle of olive oil and a few more leaves of basil.
