Many people have turned to lentils as a substitute for meat and nothing beats a bowl of lentil soup on a cold winter day when summer in Tuscany is moons away. Lentils were among the first legumes to be cultivated in an organized manner and one of the earliest to be made into dishes.

Lentils are rich in proteins and100g of these lens shaped seeds are the equivalent of 235g of meat, In Tuscany we consume lentil soup as a good luck charm on the last day of the year.
